Hi! Did you ever post the dijon chicken recipe? I love the lemon chicken one you shared!

I usually "cheat" and use half a serving of regular spaghetti noodles (1 oz) and then toss in raw zoodles to the boiling water for the final minute to serve with meat sauce (usually turkey bolognese). It halves my bad carbs without making me feel totally deprived. I have a basic little handheld zoodle maker that takes a little elbow grease to operate, but it's tiny, dishwasher safe and fits in a small drawer. I use it in the warmer months to make carrot and cucumber salads.
